Keita Sasaki opened hugo after honing his skills at a number of French restaurants, including Gris in Yoyogi Uehara. Hugo is a modern bistro that offers meat and vegetable dishes which capture seasonal flavors. The bistro’s unique salad combinations—such as octopus and avocado garnished with cilantro, or sweet beets with melted cheese—are so delicious and rich in flavor that you won’t want to put your fork down when dining. Main dishes mostly feature meat offerings. The Hokkaido venison round roast is especially recommended—its lean meat is tender, light, and juicy.
