Tsubasa Tamashiro, who had a hand in Azabu-juban’s well known Pizza Strada, just opened a pizza restaurant that screams gourmet. With an already superb menu, he designed a pizza that bears his name, the Tamaki, so that you won’t forget it. Strong on unique flavors, he uses an ingredient not usually found in pizza, smoked mozzarella cheese. “Even if everyone doesn’t accept it, I just want to get the people who enjoy this taste to try it,” he says. This pizza was what spurred a growing popularity for the restaurant. The crust is crisp and light with crushed tomatoes saturated with the essence of smoked cheese. He’s honed his baking times with the crust’s quality and freshness to deliver a milky cheese topping that everyone must try.
