It’s like an edible bouquet of flowers arranged within a wooden box. Each course of temari-sushi is a work of art, an arrangement that enchants the eyes as much as the palate. Welcome to Ginza Sushi Aoki, one might say it’s an exhibit of its own.

The box contains thirteen varieties of sushi, including squid and halfbeak fish wrapped in naruto sushi, as well as sea-bream and minced shrimp sushi in the shape of a flowering tulip. At a glance, one would assume these to be original creations. However, the owner, Toshikatsu Aoki, is continuing Tokyo sushi traditions: Tuna is supposed to be pickled, gizzard shad fish is marinated in vinegar, and sea-bream is marinated in kelp. Each takes time and effort. The chirashi-zushi with prawns conjures up images of a finely patterned kimono and is highly artistic, involving a mix of gourd shavings with vinegar and pickled ginger. This temari-sushi is the marriage of sculpture, tradition, and the microcosmos of flavor. An art that’s edible.
