Pizza Studio Tamaki, Master of Pizza Napoletana
Despite never having set foot in Italy, chef Tsubasa Tamaki has made his pizzeria a hotspot for Italian cuisine in Tokyo.

Tsubasa Tamaki, who opened the restaurant PST (Pizza Studio Tamaki), is, some say, competing for the title of Tokyo’s best pizza.
The chef cut his teeth at the Savoy, then spent four years at Strada before opening his own restaurant in 2018. His main inspiration was Susumu Kakinuma, one of Tokyo’s best-known pizzaiolos. Despite never having actually worked together, Tamaki’s techniques come from Kakinuma, and he takes inspiration from him when honing his own recipes.
However, his dishes are not completely identical to authentic Italian pizzas. Although he uses a tomato base with mozzarella from Naples, his dough is made from a mix of Japanese and American flour.
