Henry’s Burger Serves ‘Wagyu’ Beef Patties

At Henry’s Burger, a little no-frills restaurant located in the trendy Daikanyama district, the menu sticks to the basics. There are just three options: a hamburger (single, double, or triple), a drink, and chips. Despite this, people come flocking because the restaurant is very well known for the quality of the wagyu beef it uses.
Ethically sourced meat and care taken with cuts
The chef, who also runs Sumibiyakiniku Nakahara, a restaurant that specialises in wagyu beef, gathers up the trimmings he doesn’t use in this restaurant and makes them into hamburgers. He also takes great care when cutting the meat, choosing not to chop it too finely in order to retain the flavour. The rest of the recipe also keeps things simple to showcase the taste: salad, cheddar, and a simple brioche bun.
