The ambiance of the restaurant Sushi B, which received its first Michelin star in 2020, is minimalist: there are eight seats at a marble counter, all in mineral colours. The main attraction is chef Masayoshi Hanada’s s surgical expertise. He only uses fresh, quality produce.
The sushi and maki are the stars on the plate, but there are also other featured dishes: squid seasoned with a dash of lime, red tuna, fish (scad) that’s been marinated in salt for four days, intense wild salmon, smoked tuna belly… And for dessert, you’ll be rewarded with rice ice cream seasoned with olive oil, a touch of salt and a sweet soy sauce.
